Donkey is the loud, obnoxious and always-happy donkey from the Shrek franchise. He is extremely loyal to his friend, Shrek - much to Shrek's chagrin sometimes - and after helping rescue Princess Fiona from the clutches of a fire-breathing dragon (affectionately called 'Dragon'), Donkey ends up marrying the dragon.

Special thanks to solidejake for additional sound clips.
As the original voice of the character, Eddie Murphy (with the aid of the voice director) crafted an entertaining and unique character. His voice and performance is instantly recognizable. He has that loud - and almost naive - tone to his voice that helps the character really stand out.
Mark Moseley (who also doubled for Eddie as Mushu in most Mulan-related material outside of the feature film) is nearly indistinguishable from Eddie. It's no wonder that Mark doubles for Eddie. He does a great job imitating him, and only gets better with the more recent attempts.
Dean Edwards filled in for Eddie in the Scared Shrekless television special. And much like Mark, Dean does a phenomenal job duplicating Eddie's performance. If it weren't for the fact that the credits state otherwise, most people would assume that it was Eddie reprising his role.
Jason J. Lewis voices Donkey in the new Dreamworks PSAs. Colour me surprised on his impression. It's always funny to have such a memorable character and voice actor like Eddie with Donkey, and then looking at the headshots of the replacement VAs and trying to imagine Eddie's voice coming out of them, ha ha.
Overall, although all four voice actors sound nearly identical, my vote is going to Eddie, simply because he was the original voice of the character.
