Hot ****, his demo take DOES sound like Knuckle Joe. Yup, definitely him.

Back to Amy Birnbaum as Kirby, I agree that it's her doing Kirby's dubbed lines in the first episode. This particular line here is a dead ringer for her Charmy.

Anyhow, here are some more I found today.

Kine is Darren Dunstan - Dead ringer to Mr. Sukizo.

Bonkers is Maddie Blaustein - If it's not her. the character sounds a LOT like Professor Curio.

Crowmon is ??? - I cannot tell if this is Mike Pollock or Dan Green..

Waddle Doo is Maddie Blaustein - I'm getting some major vibes of Meowth's accent in this one.

Iro is Kevin Kolack - Uses a similar type of voice in his demo, at 0:12

Spikehead is Amy Birnbaum - Sounds similar to her Max.

Honey is Kayzie Rogers - Sounds like her Lillian Meridian.

OK, now that is a Curio done by Blaustein. Looks like Bookem wasn't the only recast. I'm just gonna guess right now that Lobozzo played the original Curio along with Bookem and the roles were equally split between Rannells and Blaustein? Just a hypothesis.

Nah that's Ted Lewis. Around "What a strange looking drink...yes. I wonder what it tastes like?", you can hear the Giovanni seeping out of him. Fun fact: He also played a demon sheep in that series using the exact same voice as Yami Bakura.

Hmm...listening to the Baroness, it seems like she, Miranda and Mabel all have the same voice actress, and going by all three's credits, I think it's Amy Birnbaum.

Yup. She actually confirmed these roles a long time ago when Serebii interviewed her.

Found it!

I'll try and see what other characters I can find and who need to be identified. I'll edit this post with characters, as well as post updated images for Maddie's credits.

EDIT:

Slice N' Splice - It's Eric Stuart using his Meta Knight voice, minus accent.

Doctor Moro - Sounds like Darren Dunstan.

Dr. Yabui - ??? I don't know, Kirby Wiki says it's David Lapkin, but I'm not too familiar with his work..

You see, the thing with Dunstan is that he's not credited. Kine and Moro do sound a lot like him though, so it's still possible.

EDIT: I'm not sure if we identify song artists on here, but does anyone recognize who sings the Kirby theme? The credits credit Norman J. Grossfeld and Ralph Shuckett for it but I think they mean composing rather than performing (Jason Paige was famously uncredited for singing the first Pokémon theme, for instance).

Oh yeah. It's a dead ringer for Scarlett and a lot of her other female roles. Not only that, but Sirica has some very Ash-like screams later in the episode.

Technically she's uncredited in her debut episode, but it's still most definitely her and explains why she's credited again for the finale (when Sirica reappears).
