===Donkey Kong in Mario Kart 64===
According to a comment on this video, Charles Martinet stated on his Facebook account about 8 months ago that he was the voice of Donkey Kong in Mario Kart 64 (and by extension all the other games that reused those original voice samples). You'll have to friend him to be able to find this comment, though.

To serve as further justification, the voice-over section of his official website, albeit outdated, does have him credited for "Donkey Kong...in Nintendo 64 games" with Baby Mario being the newest featured role, so this was last updated for Mario Golf (before DK64) and appears to be in line with his more recent comment.

III. Speculation
-Mike Madeoy is the only other male in Tennis, therefore he is Tennis' Harry by default. I don't think he's the guy who says "Fault" and "Out" (i.e. the umpire [guy on the right]), since that voice sounds a little like a mix of Luigi and Waluigi (and even looks like a blue Mario Brother recolor, coincidentally enough).

-Dex Manley seems to be Charlie based on his known voicework, hinting that Golf's credits are in chronological order when quantity is the same.

-Mark Dias appears only in Golf, so he is either Sonny, Harry or Joe. I'm thinking Joe, based on the order given [the 4 GB guest characters starting after White]

-Terry Gangstad, appearing only in Golf and based on the order, appears to be Sonny [Yes, he's a guy, and he's older than Madeoy]

-Madeoy appears to also be Golf's Harry [a different character] based on similar voices and, again, the order.

-Kid [Golf] and Alex [Tennis] have nearly the same young boy voice and there is only one actor of this kind between both titles, thus they're both done by Penn Badgley, who was 12/13 at the time.

-David White appears to be the announcer in Golf. There's simply one older male voice actor [5] more than the # of non-Martinet older male characters [4] (Charlie, Sonny, Harry, Joe)

-With respect to Manley, Haley Burns [exclusive to Golf] appears to be Plum.

-In Golf, Fleming (Daisy) sounds most similar to Azalea.

-Maple [from Golf] has a distinct voice that, assuming the 4 GB guest characters are a separate tier, would make Taylor her actress [which makes sense given that's she credited 2nd in favor of quantity-based crediting]. Her "Yeah" reminds me a lot of Taylor's take on Daisy in Mario Party 3, just not as shy-sounding. If by chance it's not Taylor it can only be Burns.

-Azalea [Golf] and Kate [Tennis] have similar voices, so they're either done by Chisum or Fleming. The voices are closest to Daisy's so assuming her credit is correct then it's Fleming that does them.

-Sherry [Golf] and Nina [Tennis] have similar young girl voices, so they're either done by Chisum or Fleming. It's Chisum, because she's the only one left.

*Birdo [Tennis], to me, sounds the most like Nina, which, based on my previous point, would also make her Chisum. Since Chisum's credit is above Fleming's this time around this is the most likely reason why.
